Delizioso!

I am so excited to cross this one off the list.

After a weekend away with my girls, I came home to an overwhelming amount of tomatoes. I quickly worried how I would consume so many in such a short period of time. All of a sudden, it hit me. This was the perfect opportunity to tackle goal #43, make homemade spaghetti sauce.

I wasted no time and searched for a recipe that a.) looked easy and b.) contained ingredients I already had at home. The winner was this great homemade Tomato Basil Pasta Sauce from allrecipes.com. 

I started chopping my tomatoes and placed them in a sauce pan with the tablespoon of butter. I let them simmer down until they began to fall apart, 6-7 minutes. In a separate pan, I sauteed onions, fresh green pepper (also from my garden), and red bell pepper. The recipe did not call for this but, I wanted to create a heartier sauce. I added in the sauteed veggie mixture and continued to follow the rest of the recipe.

The end result was a fresh pasta sauce paired perfectly with a green summer salad and a chilled glass of white wine. I'm still in awe that I made it but, I did and it was delicious.
